With locations in London, Dubai, Monaco, and now Miami, Amazónico fuses upscale dining, vibrant music, and lush design into one unforgettable experience.

We are seeking a highly hands-on, detail-oriented Assistant Director of Operations to support the daily execution of service across all areas — including the main dining room, sushi bar, terraces, lounges, and cocktail bar. The ideal candidate is on the floor daily, visible to both staff and guests, acting as a leader, coach, and operator who can anticipate needs, solve problems in real time, and drive the team toward success.

Key Responsibilities

  • Lead daily service operations across all areas (restaurant, bar, lounges, sushi bar, and terrace) ensuring alignment with Amazónico standards.
  • Conduct detailed pre-shift meetings and post-service recaps to align teams on expectations, pacing, and guest flow.
  • Support the Director of Operations in executing the service vision and maintaining brand consistency across all guest touchpoints.
  • Supervise floor managers and department heads, providing real-time coaching and redirection during service.
  • Act as a floor leader and point of contact during peak periods, resolving guest issues promptly and professionally.
  • Ensure all stations are properly set, stocked, and staffed before every service; address deficiencies immediately.
  • Partner with BOH leadership to coordinate timing, menu flow, and communication between kitchen and FOH.
  • Drive labor efficiency through strategic scheduling, deployment, and active floor supervision.
  • Perform daily walkthroughs to ensure compliance with cleanliness, safety, and maintenance standards.
  • Assist in the onboarding and training of all managers and hourly staff to ensure elevated service delivery.
  • Manage daily reporting, shift notes, and operational handoffs to ensure continuity between shifts.
  • Serve as acting Director of Operations when needed.

Required Qualifications

  • Minimum 5–7 years of progressive leadership in high-volume, luxury or fine dining operations.
  • Deep knowledge of operational areas including dining room, bar, lounge, service flow, staff deployment, POS systems, and guest recovery.
  • Ability to lead by example – remaining calm under pressure, firm but fair, and highly visible on the floor.
  • Proven ability to manage multiple service environments simultaneously with precision and grace.
  • Fluency in operational logistics, labor planning, and service choreography.
  • Excellent communication, delegation, and follow-through skills.
  • Bilingual (English/Spanish) preferred.
  • Availability to work nights, weekends, holidays, and late hours as needed.
